Fatty Acids in Oils and Fats


This method is for the determination of fatty acids in common animal and vegetable oils and fats, and fatty acids.  Glycerides and phospholipids are saponified and fatty acids are liberated and esterified in the presence of boron trifluoride (BF3) and analyzed by ifrared spectroscopy (IR).
